Highland Boundary, Scotland's award-winning wild distillery, and Jannetta's, a family-owned gelateria, have joined forces to create a series of sorbets crafted from Highland Boundary's wild Scottish botanicals, bringing the authentic taste of Scotland's native landscape directly to the people of St Andrews.
The new sorbet collection will feature unique flavours including Gorse and Scots Pine, made directly from these native plants and trees from around Highland Boundary’s distillery in Perthshire. Each sorbet is crafted using Highland Boundary's expertly distilled botanical extracts, combined with Jannetta's traditional gelato-making techniques that have been passed down through generations.
Highland Boundary, founded on the principle of being "nature positive," specialises in creating innovative botanical spirits, liqueurs and syrups using wild botanicals that celebrate Scotland's native flora while championing environmental regeneration. The distillery holds the distinction of creating Scotland's first Birch Spirit, Wild Scottish Bitters and Scots Pine product.
Speaking about the collaboration, Highland Boundary founder, Marian Bruce, said:

These aren't just sorbets - they're edible landscapes that tell the story of our native plants and their incredible flavours - from the honey-sweet notes of gorse to the resinous complexity of Scots pine. The new botanical sorbet collection will be available at Jannetta's in St Andrews now, allowing both locals and the thousands of visitors who flock to the historic town to experience this unique taste of the Scottish wilderness.
